Lumberyard has a Dissolve FX feature you can enable under the Shader Generation Parameters in the material editor. You can control the dissolve amount using the Dissolve Percentage control at runtime or preview it in the material editor. See the documentation for more information on the dissolve options (search for Dissolve FX on this page)
